Cellophane noodles (also known as Chinese vermicelli, bean threads, bean thread noodles, crystal noodles, or glass noodles) are a type of transparent noodle made from starch (such as mung bean starch, yam, potato starch, cassava or canna starch), and water. To use, soak in boiling water for a few minutes. The noodles will absorb the water so if you want soup instead of a noodle dish, make sure you have enough water. Drain and add to your favorite broth, or seasoning the noodles in boiling water with your favorite flavoring. Fish sauce, soy sauce, vinegar, and chili oil are all common flavorings. Add vegetables, shrimp or meat and enjoy!
